In addition to meeting basic kosher requirements, glatt kosher represents an even higher standard of kosher certification. The term glatt  refers to meat that has been inspected for specific internal defects and found to be free from blemishes that would render it non-kosher. This rigorous standard is especially focused on the lungs of the animal, which must be free from any adhesions or imperfections.

Being Glatt Kosher Certified means that the meat not only meets the general kosher criteria but also adheres to this stricter inspection process, ensuring the utmost quality and adherence to kashrut. This extra level of scrutiny provides additional assurance to those who seek the highest standards of kosher meat.

Key Aspects of Kosher Meat:

Species: Only specific animals are considered kosher. For example, cows and sheep are permissible, while pigs and camels are not. In seafood, only fish with fins and scales qualify as kosher.


Slaughtering:
Kosher meat comes from animals that have been slaughtered in a humane and specific manner called "shechita." This process is performed by a trained professional, known as a shochet, to ensure both ethical treatment and proper blood drainage.

Processing:
To maintain kosher standards, meat and dairy products must be kept separate. This includes using distinct utensils and equipment for meat and dairy items to avoid cross-contamination.

Inspection:
After slaughter, the meat is thoroughly inspected to ensure it is free from defects or diseases that would render it non-kosher.

Preparation:
Kosher meat undergoes a salting process to remove any remaining blood. Additionally, certain parts of the animal, such as the sciatic nerve, are not consumed.
